a sweater makes all the difference

It's coming

The weather has stayed pretty nice around these parts so far. In fact, I haven’t really needed my winter coat yet. A sweater usually seems to do the trick. But I heard that the forecast calls for a little flurry of snow tomorrow. Good thing it will be Saturday and I’ll be curled up on my couch with a book.

a little getaway

Andy planned a little getaway for us last weekend….to Wyoming. That’s right folks. Pinedale, Wyoming to be exact. And I was pretty psyched about it. We went to Pinedale specifically to eat at the Wind River Restaurant & Brewery And the food was definitely worth the drive. We stayed at the Hampton in Pinedale which was so gorgeous I kind of just wanted to move in there permanently. The next day we took a little drive on over to Jackson Hole. We puttered around the shops for a bit, grabbed some lunch and drove home by way of Soda Springs. And yes we did stop to marvel at the man made geyser. Not quite the same as Yellowstone but a decent pit stop in its own way. A day and a half later we were back home and ready to face the week refreshed.

That’s pretty much all I got right now. No time for crafty posts or fashion posts or anything of the sort these days. Now back to homework!

Make Ahead Meals

This Saturday my mom and sister, Jen came over to help me make a whole bunch of dinners to put in the freezer. I already knew that this would be a busy semester so I have been trying to think of things that I can do to lighten my load. One of the hardest things to do is figure out what we’re going to eat for dinner after I’ve had a long and exhausting day at school and work.

My mom used to make freezer meals for an entire month at a time. She would put a calendar on the fridge that would list what dinner was planned for each day. The meals for the week would get moved to the fridge at the beginning of the week to thaw. Sometimes there was some final prep work to be done when you got home and then you’d heat and eat. Very quick and didn’t require you to do much thinking or decision making after that long day.

My make ahead meal plan also included some treats, so there would always be something to snack on as well.

I plan to add more, but this was just a test run since I’d never done it before.

We did all the chopping of veggies, baking & shredding of chicken, browning of hamburger and then we assembled all the meals, put them in containers or baggies and labeled them.

I then put together a weekly menu plan that includes instructions on how to heat or put the meal together each evening.

I hung that on the fridge so that Andy can get dinner together on those nights when I have to stay late at work or have a night class.

We have a freezer in our garage and it’s now entirely filled with these freezers meals- enough to last us the entire month and maybe even longer.

When I planned my meals for the month of September I figured in one night a week for a Date Night/Take Out and two nights a week for eating leftovers. I also planned some nights where we would have something ‘easy’ like pancakes or grilled cheese.

I’m excited to serve my first make ahead dinner tonight (fajitas) and let you know how it goes! If all goes well and this does actually eliminate some stress for me, then I’ll do it again next month!

Raspberries and dutch ovens

Starting the day off right with a cinnamon crumb donut. A fun filled Friday at Bear Lake for Raspberry Days with mom, Jen and Nellie. Lunch at Cafe Sabor.

An evening spent in beautiful Liberty at Uncle Dave’s. Family, 5th annual dutch oven cookoff, feasting. 3rd place- Dave’s cheesy potatoes, 2nd place-Mom’s shepherds pie, 1st place- Cierra’s raspberry cobbler.

Lots of Nellie giggling, snuggling and smooching for everyone. Fishy faces, clapping Yay! and blowing kisses.

Coming home to slip into pajamas and lounge.

Perfect.

Busy and fun weekend

The month of June is shaping up to be seriously busy. It’s been really fun though and I can’t wait for it all to culminate with the wedding. I’m beginning to feel very excited. I feel all jittery (in a good way) when I think about it. Anyway, this weekend was another one filled with family events and fun outings together.

On Friday we went up to Logan so that Andy and his dad could work some more on the arbor that they built for the wedding. It’s turned out so well. We spent the evening finishing up our puzzle and watching a movie.

Saturday morning was the first day of the Farmer’s Market in Salt Lake. We didn’t want to miss a chance to stop at the Volker’s booth. This time we came home with asiago basil bread and tomatillo cilantro dip. So yummy!

We brought Ashland along for the first time. Despite getting really excited about all the other dogs in attendance, she did pretty well.

We stopped for breakfast at Bruges Waffles & Frites. If you’ve never been there, you are seriously missing out. Oh my gosh…delicious. You must go there and try the machine gun sandwich. It’s lamb sausage in a baguette topped with andalouse sauce. This time we opted for their Waffle Monster. It’s two cinnamon or vanilla waffles with strawberries, vanilla bean icecream and speculoos spread in the middle. Melt in your mouth amazing.

Ashland had a great time- as did we! She was so tired that she totally passed out with her face in the arm rest. Doesn’t look comfortable to me but she was snoozing away!

That afternoon we met my family at Maddox for lunch to celebrate my grandma’s 80th birthday! Isn’t she pretty? I hope I look that fantastic when I’m 80.

Weekend Images

Sunday was the best day of the weekend. Andy and I drove down to IKEA and picked up a new dresser. Then we stopped off for brunch at the Dodo Restaurant in Sugar House. Seriously…yum. That was place was amazingly good.¬† Afterward, we drove around the avenues looking at all the cool houses and then stopped off at Barnes and Noble on the way home.

We woke up to discover that it had snowed some in the night. But it had all melted away by the afternoon. I was able to crack the windows and let some fresh air in. Mauney cat was quite happy about this.

I spent the afternoon cleaning out my car, doing laundry, working on homework, changing sheets and washing dishes. Afterwards, I settled on the couch with my new book, “I Wonder,” by Marian Bantjes.

Marian is a typographic illustrator who was inspired by the ancient illuminations of manuscripts. Since typography and manuscript illumination are two of my top interests, I knew this book was the book for me.

The book is a funny, creative collection of observations on visual culture and design. Here’s a peak at some of the pages.

So far, I’m really enjoying it. I purchased my copy from Barnes and Noble. I highly recommend it.

In awhile, I’ll put some hamburger vegetable soup on the stove to cook, pick out something from my Netflix instant cue, and begin winding down for the evening.

on my mind….my morning & spring recipes

I forgot that my morning class had been canceled today. I could have slept in, but instead, I now find myself at work two hours early, sipping green tea and lazily going through my list of projects to complete.

The snow has melted and little greens are popping up everywhere around our yard. I feel the excitement of spring coming on. Last night I spent some time gathering up some of my favorite spring recipes and looking for some new ones to try.

This recipe for Pear, Apple, and Fennel Salad from Cannelle et Vanille was looking especially yummy, light, and fresh. It just so happens that I have two pears in the fridge waiting to be eaten. I think I may have to try this over the weekend.

Welcome Monday

It was a nice weekend. Nothing out of the ordinary, but nice. It was so sunny and warm today that Ashland and I decided to take a walk around the block. Just what we needed. I worked ahead on a lot of my homework, so it feels good to know that I won’t have to face any deadlines for awhile.

My mom just got home from a cruise for work. She’s a travel agent, so she got to go see the christening of the new Disney Dream ship. She called to tell me all the awesome details. Jennifer Hudson sang at the ceremony. It sounds like it was amazing and that the ship is just unbelievable.

Speaking of cool vacations, Andy and I have chosen a honeymoon and I couldn’t be more excited about it. It’s going to be so much fun. It’s the perfect honeymoon for us. June can’t come fast enough! We saw Andy’s parents on Saturday and talked wedding stuff. Every time I talk about the wedding, I get even more excited. It was nice to visit with the Lynne’s. They let me blabber on about whatever I want and I always feel like I can talk to them about anything.

There is just so much awesomeness coming up that I can hardly stand it. I think 2011 is going to be one of the best years yet.
